Preheat your oven to 350ยฐF (175ยฐC).
Grease and line an 8×4-inch loaf pan with parchment paper.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the softened butter and honey together until light and creamy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
Add the Greek yogurt and fresh lemon juice, mixing until smooth.
Gradually add the dry ingredients to the wet mixture.
Fold together gently until just combined and no dry streaks remain. Avoid overmixing to keep the loaf light and tender.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45โ55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack.
Whisk together the honey, lemon juice, and powdered sugar until smooth.
Drizzle over the cooled loaf, allowing the glaze to gently run down the sides.
