Unlike many store-bought ciders made from concentrates, this recipe begins with whole apples, allowing their natural sweetness to shine. A blend of sweet and tart apple varieties creates a perfectly balanced flavor, while pure honey adds a smooth, floral finish. Wash the apples thoroughly. There is no need to peel or core them. Cut each apple into quarters and place them into a large stockpot.
Add the water, cinnamon sticks, cloves, orange (if using), and allspice to the pot.
Bring the mixture to a boil over medium-high heat. Reduce the heat and simmer gently for about 60 minutes, stirring occasionally as the apples soften and release their flavor.
Using a potato masher or the back of a large spoon, gently mash the softened apples to release more juice and flavor.
Continue simmering for an additional 30 minutes.
Pour the mixture through a fine-mesh strainer or a cheesecloth-lined colander into a clean pot or large bowl.
Press gently on the fruit to extract additional juice. For a clearer cider, avoid squeezing the fruit too firmly.
Allow the cider to cool slightly before stirring in Browning’s Clover Honey.
Begin with ยผ cup, taste, and gradually add more honey until the cider reaches your preferred level of sweetness.
Serve warm with a cinnamon stick, fresh apple slices, an orange slice, and a light drizzle of Browning’s Clover Honey if desired.
For a refreshing autumn beverage, chill the cider completely and serve over ice.
Store homemade honey apple cider in an airtight container in the refrigerator for up to 5 days.
Freeze in freezer-safe containers for up to 6 months, leaving about an inch of headspace for expansion.
To reheat, warm gently on the stovetop over medium-low heat until heated through. Avoid boiling after adding the honey to preserve its delicate flavor.
