Preheat your oven to 325ยฐF.
Line an 8×8-inch baking pan with parchment paper, leaving enough overhang to easily lift the bars out after baking.
In a medium bowl, combine the graham cracker crumbs, sugar, melted butter, and salt until evenly mixed.
Press the mixture firmly into the bottom of the prepared pan.
Bake for 10 minutes, then allow the crust to cool slightly while preparing the filling.
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.
Add the Huckleberry Creamed Honey, sugar, eggs, vanilla extract, sour cream, flour, and salt.
Mix just until smooth and fully combined, being careful not to overmix.
Warm the Huckleberry Creamed Honey and huckleberry preserves together until slightly softened.
Stir in the lemon juice until smooth.
Pour the cheesecake filling over the cooled crust.
Drop spoonfuls of the huckleberry mixture across the surface and gently swirl with a butter knife or skewer.
Bake for 40โ45 minutes, or until the center is mostly set with a slight jiggle.
Allow the bars to cool completely before refrigerating for at least 4 hours.
Slice and serve chilled.
Store cheesecake bars covered in the refrigerator for up to 5 days.
Freeze individual bars in an airtight container for up to 3 months. Thaw overnight in the refrigerator before serving.
